Co-founder Keely Williams knows what excellence looks like. She owned and operated an award winning cocktail bar in New Orleans, one of the most fiercely competitive bar markets in America, that earned recognition as Bar of the Year from Eater, a prestigious honor in a city where extraordinary is the baseline.
That experience shaped everything. When you have run a bar at that level, in that city, you understand instinctively what separates a good drink from a great one, and you refuse to let the garnish be the thing that lets it down.
Life at The Well taught us everything
Today, Keely and her partner Jason Decker co-own The Well Hotel and Tap Room in Southern Colorado, a place of stunning beauty and extreme business reality. Sales fluctuate dramatically, day to day and season to season, in ways that make traditional fresh-fruit garnishes a genuine operational challenge.
In a high-volume city bar, waste is painful. In a rural hotel with seasonal swings, it can be crippling. Keely and Jason tried to source premium dehydrated garnishes online and found the market startlingly bare. Low quality, inconsistent supply, nothing they would be proud to float in a craft cocktail. So they built what did not exist.
Cutting fresh fruit takes thirty to forty-five minutes a day. Pay someone to do that seven days a week, and it adds up fast. Add on the fifty percent or more of fruit that never makes it into a glass, and you are looking at a problem that is wasteful, expensive, and universal.
Southern Colorado: nature's ideal dehydration chamber
When Keely first experimented with dehydrating fruit back in New Orleans, the results were inconsistent. The city's famously intense humidity worked against her at every turn. Everything changed in Southern Colorado. Situated at 6,200 feet elevation in a dry, high desert environment, the low humidity, high altitude, and arid climate work together to draw moisture out of fruit slowly and evenly, preserving natural shape, locking in vivid color, and producing a garnish of noticeably higher quality.
